Bnh Tt Chuối

Thường lm bnh tt chuối, người ta ngm nếp với nước cốt dừa v thm 1 t đậu đỏ - chuối th dng chuối xứ chn lm nhn - đn bnh ốm hơn khng th nếp nhiều qu mất ngon - ăn khng hết th để freezer rồi từ từ cho ln l nướng lại cng ngon hơn.

Nguyn Liệu:

- 1 kg gạo nếp
- 1 t đậu đỏ, đậu đen
- 1 vi l dứa (optional - ty )
- 12 tri chuối sứ chn mi
- 1 tri dừa tươi nạo ra lấy nước cốt dừa (hoặc dng 1 lon nước cốt dừa)
- 2 muỗng caf muối
- 3 muỗng canh đường
- 6 L chuối

Cch Lm:
 

- Chuối sứ chn mi, lột vỏ, cho thm cht muối + đường vo chuối.

- Gạo nếp vo sạch để ro (nếu l loại gạo nếp dẹp di, cn nếu l nếp loại trn th cần ngm khoảng 12 tiếng), trộn thm t đậu đỏ đậu đen. L dứa xắt nhỏ, gi nt vắt lấy nước cốt mầu xanh c mi thơm. Bắc chảo nng, cho nếp vo xo, thỉnh thoảng rưới nước cốt dừa v nước l dứa vo trộn cho đều, khoảng 15 pht cho nếp hơi ra nhựa th cho thm một it nước cốt dừa trộn đều xong nhắc ra khỏi bếp. Nhớ canh sao để nếp đừng bị nho hay qu chn, chỉ hơi ra nhựa dnh nhau để gi cho dễ m thi. Hy xem trnh tự của 8 Steps sau đy:

Gi như bnh tt nhn đậu, nhưng bọc lớp nếp t hơn cho cn bằng với nhn chuối bn trong.
Luộc chn, mang nồi ra khỏi bếp để thật nguội rồi mới vớt bnh ra, l sẽ giữ mầu xanh đẹp.
Lau sạch để ro.

Banana Stuffed Cylindrical Sticky Rice Cake
(Bnh Tt Nhn Chuối)



Processing material and equipment:

Ingredients:
- 1 kg sticky rice.
- 12 bananas
- 1 kg shaved coconut flesh.
- 2 teaspoons salt.
- 3 tablespoons caster sugar.
- 6 banana leaves
 
Equipment:
- Bowl and plate.
- Basin and basket.
- Cooking pot and stove.
- Cooking pan.
- Grater.
- Filter.

Preparatory materials:

1. Wash glutinous rice thoroughly. Soak in water with a pinch of salt and sliced pineapple for 12 hours.  Wash again and allow it to drain.
2. Grate coconut flesh into a bowl containing 0.5 liters of water. Squeeze the flesh and extract coconut milk. Keep the flesh to extract coconut milk in second time. Peel bananas and slice each
in two.
3. Dry banana leaves in the sun until they wilt. Separate each leaf into 2 parts, the flesh and the midrib. Clean and tear leaves into small pieces of about 4 cm in width. Tear off the midribs to have strings, which are exposed in the sun for a further 30 min.

Preparation Steps:

1. Prepare the stuffing: scent cut bananas with a teaspoon of salt and sugar. Leave for 30 minutes.
2. Prepare sticky rice: boil coconut milk with a teaspoon of salt in the cooking pan. Add glutinous rice. Continue to boil for about 20 minutes until rice becomes soft and sticky. Remove pan from stove and add cooked black beans and mix.
3. Wrapping: place a rice bowl of boiled sticky rice on the banana leaves. Spread a layer of 1cm thick of sticky rice onto the leaves.
4. Place 2 banana halves in the center of sticky rice. Wrap into cylinder form.
5. Tie along and transversal the cake and banana as shown. Leave a gap of 1cm between ties.
6. Cooking: place cakes in a cooking pot. Add water and place a layer of banana leaves on top then cover the pot by lid. Cook slowly for 6-8 hours in boiling water.
7. Cake well cooked.
8. Final product is ready to eat. This kind of cake is often eaten during traditional festival such as "Tet Holiday", and death anniversaries.

Recommendations:

- Bananas should be fully ripe.
- Cakes should be wrapped really tightly so that they do not break while being cooked.
- The outside crust should be smooth and not sticking to the banana leaves.
